The most important question: Why cold brew your tea?
When tea is brewed in boiling water, greater amounts of tannins (what gives the tea is a strong, bitter taste) are extracted from the tea leaves, which grows even stronger once the tea is chilled. Which in turn, also explains why regular iced teas need a ton of sugar.
By cold brewing our tea, we extract less tannins from the leaves and obtain a more even counterpart. The result? A smooth flavoured iced tea that is rich in antioxidants, and sweetened only with a hint of Canadian maple syrup, making it much healthier than regular store-bought iced teas.
